BAKED COFFEE PUDDING

Ingredients

  • 125ml milk
  • 30ml coffee granules
  • 250ml self-raising flour
  • 125ml caster sugar
  • 125ml brown sugar
  • 1 egg
  • 30g margarine (melted)

Sauce ingredients

  • 500ml water
  • 30ml coffee granules
  • 180ml brown sugar
  • 45ml golden syrup
  • 45g margarine (melted)

Method

Pudding: Heat the milk and coffee and leave to cool. Sieve the flour, caster sugar and brown sugar together. Beat the eggs and margarine until creamy. Add the coffee mixture to the flour mixture. Pour into a greased Large Oval Roaster.

Sauce: Mix all the sauce ingredients and pour over the batter. Bake at 180°C for 1 hour. Serve with cream or ice cream.
